Vietnamese Pho Veg Version

Aside from 'Banh mi' pho' is the other smash hit that put Vietnamese cuisine. It's so a humble soup that uses affordable ingredients and turns them into a flavorful and aromatic food staple.

Pho has been my home and one of my absolute favorite things to eat since I discovered and try it the first time.


What is pho?

Pho is originally Vietnamese cuisine. It's Vietnamese noodles soup that's often made with beef and topped with some awesome things like a fresh bean sprout, baby spinach, afresh coriander, basil, and green chilies.

But I made this as a veg version of pho but believe me it's still delicious.

There is just something about it the fragrant broth the slightly chewy rice noodles and all the aromatic toppings. It's such a mouthwatering dish that you should try it at least once.

One of my Vietnamese Food bloggers makes and when I saw her make this I thought let me also try so I make and believe it's a super delicious thing I learn and Eat. Making Pho is super easy as other Noodle soups.




Things to do to make this Vietnamese pho aka Noodles soup

  • Broth: You make prepare some delicious aromatic broth for this.

  • Saute Mushroom: You need to saute some mushrooms to make this dish take another level.

  • Rice Noodles: You need to boil rice noodles and make sure we use only rice noodles. So there is no other substitute for rice noodles.

  • Fresh Veggies: Baby spinach, Fresh coriander, some chopped chilis ( red or green ), and Basil leaves are also can use.


The broth:

Some say that clear broth is an important quality in pho', However, I don't think its matters. The flavor is what matters. To me, a slightly cloudy broth with a killer taste is the perfect broth for ' pho'.

What's important is the aromatics and spices that we add to our broth to create another level of pho taste.

Roasting ginger and star anise and cinnamon stick is take our broth to an amazing flavor.



Ingredients :

  • Rice Noodles

  • Broth

  • Mushroom

  • Baby spinach

  • Fresh coriander leaves

  • Green chilies



Method:

Step1 - Boiled Rice Noodles

  • Heat a pot full of water.

  • Once the water is boiled add salt. and rice noodles and let it cook.

  • Stir well.

  • Once the noodles are done remove them from heat and water and keep them aside.

Step 2- Broth

  • In separate pan roast star anise, and cinnamon stick. and ginger piece and reason all for about 5 minutes.

  • Now take another pot with water and add these aromatic spices and chopped cauliflower and chopped carrots. And add salt.

  • I m using here cauliflower and carrots coz as you know I don't eat onion garlic and do not know if I can use vegetable stock powder or not so you can use here vegetable stock powder if you eat onion garlic.

  • Bring to a boil for about 30 minutes.

  • Once it's boiled strain this water and collects it into a jar.


Step 3 - Saute Mushroom

  • Take any kind of mushroom white or brown both will work perfectly.

  • So washed the mushroom nicely and cut it into slices.

  • Heat pan with 2 tablespoons olive oil and saute mushroom until it's all dry.

  • Remove from heat and keep aside.

Step 4- Assemble time

  • Take a deep bowl. and add boiled rice noodles.

  • Pour over some very hot broth.

  • And add mushroom on the side Some chopped baby spinach Fresh coriander chopped and some chopped green chili if you like some spice then you can add some Siracha on top also.

  • Serve hot and enjoy.
