Veggie Lo Mein Noodles with Crispy Paneer



You Know nowadays I m so obsessed with Asian fusion cuisine and my latest obsession is this delicious veggie Lo Mein with simple stir sauce and tons of fresh vegetables and off-source noodles coz its noodles recipe and you can enjoy this dish with crispy paneer.

Believe me, these veggie Lo Mein noodles are lekker.


 

What is Lo Mein Noodles;

If you are not familiar with this Lo Mein It is a Chinese /Cantonese traditionally prepared with egg noodles, vegetables, and some types of meat.

I like to have noodles more than pasta.

So here I m going to share with you chew fry noodles, crispy vegetables, sauce, and tons of flavor. What else could be better right?


 

Tips to make the best paneer Lo Mein.

This Lo Mein is so easy that the entire can be whipped up in 40 min or less. It uses a ton of fresh vegetables and super simple sauce for truly delicious veggie noodles stir fry. Here are my favorite tips and tricks for making this recipe.

  • Slice vegetables very thin.

Since we cooking the vegetables in this recipe for a very short period they need to be sliced thin.

  • Do not overcooked vegetables.

For me, a great vegetables stir fry has veggies that are sauteed but still crispy and never soggy. Since noodles add a nice chew texture, crispy vegetables lead to a great crunch in the dish.




How to make crispy paneer.

To make these veggie Lo Mein noodles a complete meal I decided to add some crispy paneer on top.

Here are my tips to make crispy paneer.

  • Extra-firm paneer, soft paneer has way too much moisture and will fall apart and crumbled while being pan-fried.

  • always press the paneer before cooking with it to draw excess water.

  • Simply cut the paneer in half and press between towels or paper towels and press.

  • Use corn starch - for coating - Corn starch leads to a nice crispy exterior that will soak up any sauce.

  • Cook in oil when pan-frying. oil helps to draw in enough heat to crisp and brown the corn starch.

  • Right at the end of stir-frying the paneer add in 1tsp soy sauce to give a boost flavor.


 

What noodles work best in the Lo Mein noodles recipe?

Practically for me as in this recipe any noodles can work best. Like Ramen noodles, rice noodles, or even spaghetti noodles ( I used here spaghetti noodles).

Can I add extra vegetables?

100% Go ahead and try with more vegetables.

for this Lo Mein, I add vegetables that I love however I did not use mushroom but mushroom in like ( but don't have that time so did not use). So please use whatever vegetable works best for you.

Can I make Lo Mein noodles gluten-free?

As I told you before rice noodles also can give you the best result.

Can I make this recipe sugar-free?

Yes, just replace brown sugar with coconut sugar or maple syrup. Even you can skip it.

Substitute :

Dark soy sauce - Light soy sauce

Rice vinegar - Apple cider or lemon juice

Siracha - Either omit it or replace it with chili flakes or chili sauce for some spiciness.


 

Now let's jump straight to the recipe :



The ingredient you will need :

  • Noodles

  • Paneer

  • Cornstarch

  • Sesame oil

  • Soy sauce

  • Thinly slice broccoli

  • Some chopped bell papers

  • Shredded or sliced carrot

  • Spinach

Stir fry sauce :

  • Soy sauce

  • Dark soy sauce ( optional)

  • Rice vinegar

  • Brown sugar

  • Ground black paper

  • Sirach ( optional) ( I added here red chili powder)

Instructions :

  • To begin, slice the paneer and cut it into small pieces. Take a large bowl add the paneer cubes inside and add now cornstarch. Now use your hands to toss the paneer until evenly coated.

  • Next, add 1 tbsp of sesame oil to a wok and turn on the heat. once oil hot add paneer and stir fry until paneer turns crispy and brown.

  • In the last minutes, add 1 tbsp soy sauce to flavor the paneer and a pinch of turmeric (Haldi powder). Now remove the paneer from the wok and set it aside in a bowl.

  • At the same time bring a pot of water to a boil and cook the noodles according to the package instruction.

  • After the paneer is done, Slice all veggies and make the stir fry sauce.

  • To make the sire fry sauce simply whisk together soy sauce, dark soy sauce rice vinegar brown sugar, paper powder, and optional sriracha in a bowl.

  • Now add remaining sesame oil to the wok followed by carrots broccoli. Stir fry for about 5 to 6 minutes then add chopped spinach and saute again for 2 min more. If needed add additional oil at this time.

  • Now add noodles, paneer, and stir fry sauce, and mixed and cook for an additional 3 to 5 minutes until everything is warm and coated with sauce.

  • Make sure noodles and veggies should soak up all the sauce, but if you would think more sauce feel free to add, and but I advise you here pour your stir fry sauce a little at a time. If you feel you did make extra then keep it aside. Don't throw all one time.

  • Remove from heat and serve hot and enjoy.



If you going to make this for kids you can skip out the chilis from this recipe just add a little for some taste. And if you want more heat add more chilies according to your taste.
