I m pretty sure that at this rate, there are no less than a dozen different ramen bowls recipes that you can find.
We could meat veg ramen any day. Here's how to nail and make fantastic vegetarian ramen from scratch.
Ramen with vegetables

Ramen is traditionally top with veggies like mushroom carrots and so more.
I prefer to lightly saute veggies in oil or you like raw that also work best.
Here are some more toppings for this veg ramen recipe:
Zucchini
Baby corn
Scallions/ Cilantro
Onion
Garlic
Bok choy
Baby spinach
Sesame seed toasted
Siracha
Tofu

This ramen is loaded with tender noodles and veggies. I am a big fan of the heat so I love to add chili sauce or sriracha sauce into this plus I add fresh jalapeno to this recipe. Even I add red chili powder to look so delicious so when you eat you found spiciness.

Tips:
When it comes to veggies you can allow them to cook in broth or you can add the end of some.
Substitute:
Soy sauce -n can sub with tamari if you prefer ( just giving you the option but I used here soy)
Ramen noodles - Any kind will work
Mushroom- Brown or white button mushroom
Now let's jump straight to the recipe :
Ingredients :
Mushroom
Carrot
jalapeno
Noodles pkt
Soy sauce
Green chili sauce
red chili sauce
salt to taste
Kashmiri red chili powder( for some red color)
Red chili powder
Water (Depend on how much you need)
Method :
Heat oil in a pan.
Add sliced mushroom. carrot and jalapeno.
Saute all veggies for a few min.
Now add all sauce and salt chili powder everything.
Roast all masala for about 1 min
Then add water.
Mix well everything.
Taste water if you feel anything less add now.
Now add noodles and let it cook.
If you use cooked noodles then let it boil water a little while then you can add noodles and mix well nicely.
Once everything is mixed cover it and cook it for 2 min more.
serve hot and enjoy.
If you going to make this for kids you can skip out the chilis from this recipe just add a little for some taste.
