Mango Avocado salad





This Mango avocado salad is just for refreshing summertime. Sweet mangoes and creamy avocado and crunchy cucumber come together in this easy and quick recipe just in 20 minutes.

Think of salad like a salsa. You can eat this as your own or as a dip with some pita chips or nachos or you can be served it with some grilled. So you can enjoy this salad in so many different ways.

Mango salad is the best dish you can have on summer hot days. It's very easy to make and it's delicious and also we can enjoy summer fruit.

Ingredient:

For me, the salad should always be something that we can make without any rush or any fuss. A few pantry staples, seasonal fruits, and 20 minutes are all this vegan mango avocado cucumber salad takes.

Mango :

Choose mango that is ripe but firm. They should not be tangy but sweet and tangy at the same time. If you cant find them something like this so make sure you choose a mango that you can cube easily.

Cucumber:

Can we think cucumber makes such a huge difference to a salad crunchy English cecum er is my go-to when it comes to any type of salad and this is no different?

Avocado:

Avocado is best when it comes to eating. I love to eat avocado in different ways. whether it is smoothies, salad, salsa, or on toast just I find to reason to eat avocado>

Soft and creamy avocado adds texture to this salad. Choose an avocado that is not too squeezy and you can cut them into cubes. As soon as you cut them, toss them in lemon juice or chop and add the avocado at the very last, just before mixing the dressing.

Herbs:

You can choose herbs also in this salad like basil leaves which give extra flavor to this recipe. But I used here Baby spinach leaves ( Palak Leaves ) And I don't mind eating that way also. I Found some more crunchiness in the salad and it is still tasty.

Dressing:

  • The Dressing in this salad is so yummy and takes our salad to another level. Believe me, it's super yummy.

  • I make this dressing oil-free, and sugar-free.

  • I used here maple syrup you can use honey also but I recommend maple syrup here. And add lemon juice. Lemon juice gives some tangy flavor and salt and red chili flakes.

  • If you don't have lemon juice you can use lime juice also and if you don't have both then add rice vinegar which also works best.



Before preparation :


Can you make this ahead of time?

The answer is no. But what you can do can chop mangoes, cucumber, and baby spinach and you can make dressing ready so before serving you just need to cut avocado and mixed all ingredients and mixed well. and serve it.


Substitute or extra variation:

  • You can use here cherry tomatoes.

  • Baby spinach - Basil leaves

  • You can some chopped nuts for more crunchy ness.

  • You can add sunflower or pumpkin or flaxseed or chia seed to make it more nutritious.

  • Chopped raw onion ( Optional)

  • Lemon Juice- Lime juice or Rice Vinegar

Method:

  • Dressing: Combine all ingredients for the dressing- Maple syrup, lemon juice, salt, and red chili flakes and mix well everything nicely.

  • Salad: In a mixing bowl add spinach, Mango, cucumber, and avocado along with the dressing. Toss well everything using a salad spoon or normal spoon. Just make sure don't mash mangoes and avocado.

  • Serve immediately.
