Potato pesto salad
Ingredient:
Potatoes:
Potatoes such as red potatoes baby potatoes or any kind of potatoes are best for potato salad.
Just Make sure not to overcook the potatoes or the salad will turn too much. otherwise, potatoes are mashed so quickly and we don't get the desired recipe that we looking for.
Pesto:
For the pesto, just mix everything in the mixer make it a coarse paste, and use it in this recipe.
Baby spinach, Fresh coriander, Walnuts, Olive oil, Salt.
. You can use Basil leaves, pine nuts, or any kind of nuts, that you used to make pesto that you can use here.
Even you can use processed cheese in this recipe to make your pesto. ( I did not use)
Lemon :
Fresh lemon juice adds bright top notes to the creamy potato slates.
Yogurt:
Yogurt makes these potatoes to give a more creamy texture with pesto. You can use it here with mayonnaise Instead of thick yogurt.
Method:
Much of this recipe can be made in advanced prep.
Place the potatoes in a large pot with enough water to cover the potatoes. add a generous amount of salt. Bring water to a boil. Cook until potatoes are tender. use a fork or knife to check whether potatoes are done or not. Do not overcook, or your potato salad may be mushy.
Drain and let it cool enough to handle it. and then cut the potato into medium dice.
Assemble Potato pesto salad
In the large mixing bowl combine pesto lemon juice and curd and stir well until it's mixed well.
Now add potatoes and stir well until all potatoes are well coated.
Garnish with fresh coriander or, or mint leaves, or you can sprinkle some nuts over that.
Serve cold And enjoy.
Pasta salad
Ingredient for this pasta salad
Cooked pasta
Baby spinach
Cucumber
Cherry tomatoes
lettuce
Purple cabbage
Dill
Dressing:
Lemon Juice
Olive oil
Salt
Crushed Black pepper
Method:
First, we have to boil pasta According to the package instructions. Make sure your pasta doesn't get mussy after you boiled. So once it's cooked rinse it with cold water and keep it aside.
You can use any kind of pasta here. Whatever you have in your pantry use it.
Now Chop all veggies.
Now take a big bowl and add all the veggies and pasta to that.
Pour over your dressing.
Mix well all together nicely.
And serve it.
Enjoy
Raw papaya salad
How to make :
We need raw papaya or not too ripe papaya. And some cucumber carrot and dressing I make my own and that's it.
Let me share this recipe in detail with my dressing.
Let's start
Ingredient:
Raw papaya or a little hard one
Cucumber
Carrot
Cilantro/ Coriander
Dressing.
Sesame oil
Maple syrup
Salt
Rice vinegar or white vinegar
Salt
Lemon juice
Crushed black pepper
Red chili flakes
White and black sesame seed for garnish
Now mixed all dressing ingredients and mixed well. Keep it aside.
Method:
First, wash properly all the veggies you going to use in this salad and let them dry or wipe them with clean clothes or a kitchen towel.
Now cut the papaya into thin slices.
And the same way cut cucumber and carrot.
Chopped some fresh coriander. Coriander gives this salad extra enhancement. and taste.
Now In a big bowl take all the veggies and papaya and pour over the dressing.
The next step mixed well nicely.
Sprinkle some white and black sesame seed over for garnish and it tastes well also.
Now salad is ready to serve.
Serve and enjoy.
Orzo pasta salad
How to make.
This pasta salad is the story of noodles. Be sure you cook this properly we don't want noodles to become mushy. Rinse and drain pasta and make sure it's cool before adding an ingredient.
Chop veggies into bite-size. so you can enjoy all the flavors together.
So now let's jump straight into these recipes
Ingredient:
Pasta rice
Cucumber
Coriander
Lemon juice
Lemon zest
Olive oil
Salt
Black pepper
Variation:
Cherry tomatoes
Baby spinach
Basil
Dill
Feta cheese
Olives (Green or black )
Parsley
So choose what you like to add to these recipes.
Method:
Bring a pot of water to a boil, season with salt, and cook the orzo according to the packet instructions, Once it's cooked then drain, rinse, and set aside to cool.
Transfer the cooled orzo to a large mixing bowl. Add chopped cucumber.
In a small bowl, Whisk lemon zest and lemon juice, olive oil, salt, and crushed black pepper. and parsley or coriander until mixed.
Pour this dressing over the pasta mixture and gently fold until the pasta and veggies are well coated.
I mixed everything very well.
And the orzo pasta salad is ready to serve.

Green Goddess salad
Why you'll love this green goddess salad :
The salad is loaded with veggies and still yummiest.
It's more delicious with a version of guacamole.
You can have a salad or a dip. either way still found it yummy.
Healthy, Crunchy.
Ingredients details :
Cabbage: One small cabbage is enough. But make sure it's a little hard means buying a fresh one.
Cucumber: Use small, baby cucumbers so they are fresh and crunchy.
Baby Spinach: We need this baby spinach to make salad dressing.
Avocado: Avocados must be fresh and take a big one.
Almond: Some for more crunchiness.

Salt
Olive Oil
Lemon Juice
Green Chili ( Optional)
How to make this green goddess salad :

Step 1: Combine all salad ingredients.
Step 2: Combine all dressing ingredients in the processor. And grind it well. Make it a nice paste and creamy form.
Step 3: Pour this dressing over the green chopped salad.
Step 4: Mix everything very well.
Step 5: Serve and enjoy.
Tips :
Use a sharp knife to cut your veggies. It makes perfect pieces if we use the correct one.
If you making green goddess dressing in a blender add liquid first.
If you want some heat on this salad then add one jalapeno that adds a little heat to this salad.
